Ok, this is a quick post and recipe. Dad update: He had the small procedure today to put the port in for chemo and all went well...he wasn't too groggy so he was also able to have his 2nd shot and 2nd radiation treatment. Still no nausea!!
I actually received this recipe from the mother of an old boyfriend many, many years ago and it has come in handy so many times b/c of it's simplicity. T & J love it (well, J picks out the carrots...arghhh!)
College Casserole
1 lb ground beef
1 can cream of mushroom soup
1-2 large potatoes
carrots (I use about 30 baby carrots cut up into slices or about 4 large carrots)
Cheddar cheese, shredded
1. Spray dish w/cooking oil/spray (I use the size smaller than 9x13, I'm thinking it's like 4x10?)
2. Brown the ground beef w/chopped onion & minced garlic (or onion powder/garlic powder)...just add what you think is good for your family's taste buds.
3. Peel & cut potatoes into 1/8in slices (one large potato usually covers the bottom of my dish)Layer the potatoes on the bottom of dish.
4. Cut carrots into slices and layer on top of potatoes
5. Layer drained beef on top of carrots
6. Mix soup w/milk to dilute (and to make it a bit easier to pour/spread around)
7. Place soup on top of meat layer in spoonfuls and spread around
Bake at 350 for 40 min, then add cheddar cheese (as much as you would like...we cover ours in it !) and bake for 15-20 more min on lower rack so potatoes and carrots get soft.
This is wonderful served w/a salad and bread :)

Yum. That sounds good. Lucky for me, neither of my kids mind carrots.
To be honest, I am the one most likely to pick them out. Although, I don't mind carrots in other things (chicken pot pie, chicken and dumplings, etc.)
We are going to my sister's bridal shower so we won't see you at church on Sunday.
